Cheesy Potato Soup in Crock Pot

I have had 4 large potatoes in my cupboard some time now. I decided I better use them or they would grow roots.. Which they already started to slightly.

I had thought I would make some creamy mashed potatoes with the half and half I had on hand, but then I had to think of a main dish to go with it. I wasn’t in the mood.

One morning I thought about potato soup.   I saw plenty of recipes that sounded SO good, but none had the ingredients I had on hand.  I decided to make up my own from 3 different recipes. Kind of wing it, in a sense.

I was scared at first, so I kept in the back of my mind a dinner as a back up, should this one flop. To my surprise, the   results of this recipe were heavenly!  

I chopped and peeled the potatoes.

Put them in the crock pot with frozen onions, and veggie broth (with water).

I forgot to get a picture of the cheesy part. I melted the butter in a pot on the stove and added half & half (you can use milk, I just wanted to use up our half&half). Then added some cheese. Poured that mixture into the crock pot to cook for another hour or two.  It turned out so good!

  • 4 Large Potatoes (peeled and cubed)
  • 1/2 cup frozen onions (you can use fresh)
  • 1 cup veggie broth (any broth will do)
  • 1 cup water
  • 1/4 cup butter
  • 2 TBSP flour
  • 1 cup half and half
  • 1 cup cheddar cheese


  1. In 4 quart crock pot:
  2. Add 4 large potatoes - peeled and chopped into little squares.
  3. 1/2 cup frozen onions
  4. 1 cup veggie broth - 1 cup water (add more if needed to cover the potatoes)
  5. Braggs sprinkle, salt and pepper (any amount you choose works)
  6. Cook on low for up to 7 hours.
  7. Around the 6th or 7th hour, melt 1/4 cup butter in sauce pan, add 2 tbsp flour, 1 cup half and half then 1 cup cheddar cheese.
  8. Add to crock pot and continue to cook for 1 to 2 hours on low.

I noticed on one of the recipes I was using there was a cheesy biscuit recipe. I decided to make that as well.  GREAT combo!

I was very happy with the results to this meal, and all the more happy that it was an experiment that turned out great. Nothing better then making up your own dish, and having it taste good. Not to mention, my husband raved about it Big plus there! 😉
