I realized I had better get on posting the recipes I’ve been making lately. So many yummy ones that are already becoming rather a staple in this house, and I have yet to post about them!
This Cinnamon Quick Bread came about when I was just browsing Pinterest. Somehow I feel so redundant when I say that. I seriously don’t live on there. *wink* Really.. I don’t.
None the less, late one night (8:30 to be exact) I saw this bread over on A Whisk and A Prayer. Realized it was REALLY simple, then declared to my husband, “Adam I’m going to make this bread tonight! Yummy!” Of course he was game. Who wouldn’t be? He’s loving my new love for cooking.
When I say this is easy to make, I am not joking in any way. I love that the ingredients are generally what I ALWAYS have on hand, therefore making this something I can whip up any time we are desiring a delicious quick bread.
First I mixed the dry ingredients.

Added the wet ingredients. Note: I just mixed it up with my tablespoon. It was the lady on a Whisk and a Prayer did, so I just decided to as well. Why not? ONE less dish!
I put half into my bread pan, that was greased. Then sprinkled cinnamon and topped that with sugar. I actually didn’t measure it out exactly with the recipe, just did what I felt would be good.
Poured the top layer on and sprinkled with a bit of cinnamon.
It’s turned out beautifully and smelled divine!

I am actually trying to experiment with this recipe a bit. I can’t wait to come up with my idea. First try was a bit of a problem, as I got so involved talking with my husband I over cooked it. SO I’ll try again. Can’t wait to let you know the results of the experiment.
Ingredients
- 1/3 cup white sugar
- 2 teaspoons ground cinnamon
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup white sugar
- 1 egg, beaten
- 1 cup milk
- 1/3 cup vegetable oil
Instructions
- Preheat oven to 350 degrees F. Lightly grease a 9x5 inch loaf pan.
- In large bowl combine flour, baking powder, salt and 1 cup sugar. Add egg, milk, and oil to flour mixture.
- Stir until just moistened.
- Pour half of the batter into pan.
- Sprinkle with cinnamon and 1/3 cup sugar (you can mix together cinnamon and sugar before hand, I didn't though I just sprinkled away)
- Cover with remaining batter.
- Top with more cinnamon/sugar if desired.
- Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean.
- Let cool in pan for 10 minutes before removing to a wire rack to cool completely.
- Wrap in foil and let sit overnight before slicing
- (You CAN just eat this right away, but I think there is something with it all settling that helps with the flavor. I loved it right out of the oven.)

It does sound super simple! One of three-year-old sons all time favorite foods is cinnamon rolls (he takes after me)! I am betting it turns out very similar (without the icing of course). I am going to have to try this out. thanks so much for sharing it!

I’ll bet adding some icing would be a good touch to this! It reminds me of a coffee cake whenever we eat it. But the simple form.

Looks divine! And seems very easy! Also I think I may have all the ingredients….might have to give it a try, and make sure EVERYONE eats it but me (Can’t mess up my diet!)

I know I can’t get enough of this bread.
Looks really yummy! I made some homemade bread this week and am thinking it should be a normal part of my weekly routine. I may have to try this out. (But, I will need to wait until I get all of the remnant Christmas sweets and the new Valentine’s sweets out of my house!)
