Cinnamon Sugar Donuts

These donuts were so simple to make and the kids LOVED them.  One thing I found especially nice was it worked with coconut sugar.  I like using this sugar because it’s low glycemic, and I find that keeping Jeremiah’s sugar levels down helps him with his attitude and how basically he handles life.  Less hyper! Honestly, it probably helps Noah too. It’s just more noticeable with Jeremiah.

These are absolutely DELICIOUS! A have already made them twice since finding the recipe. They really are perfect for this time of year, because they remind me of a fall/winter cake.  I think it’s the nutmeg in them.  Regardless, they will make you want more! So BE careful! They STILL have calories. ;)

I made another donut a while back, and though they were extremely good, I like these better. They are not TOO sweet, and yet sweet enough. Yep, so far these are my favorite homemade donuts.

Cinnamon Sugar Donuts

Ingredients

  • 5 tablespoons unsalted butter, room temperature
  • 1/2 cup coconut sugar
  • 1 egg, beaten
  • 1 1/2 cups pastry wheat flour
  • 2 1/4 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup whole milk
  • Cinnamon Sugar Topping:
  • 3 tablespoons unsalted butter, melted
  • 1/2 cup coconut sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. Coat donut pan generously with coconut oil or non stick cooking spray. Set aside.
  3. Cream together butter and coconut sugar until mixed well (should be fluffy if using white sugar). Add egg; mix well.
  4. Shift flour, baking powder, salt and nutmeg together. Add dry ingredients alternately with milk.
  5. Fill donut tins half full. Bake 15-20 minutes. Take out of pan immediately and swirl tops into melted butter, then sugar and cinnamon mixture. Made about 7 to 8 donuts.
