Coconut Mousse – Easiest Mousse Ever

As I said earlier, in the Just Do It post, my next thing would be going healthier. This is fun, because I can experiment with recipes, and for some reason, I find it exciting. I’ve come a long way from what I was 8 years ago.. I enjoy cooking!

Anyways.. on to the recipe.
This is completely healthy. I know weird right? How can any Mousse be healthy, well let’s walk through and I’ll show you.

First you get some coconut milk in a can. One like Jeremiah is holding here:

thaicoconut   When you get home from the store, put in the refrigerator right away.  It will need to stay there for a few days to harden.

Scoop out the hard coconut milk into a bowl, leaving the liquid in the can (use it has you wish, drink it or whatever).

Then add all the ingredients. Which include, cinnamon, xylitol (sugar substitute or you can use whatever you like), vanilla and unsweetened cocoa powder.

(As a side note: Xylitol is a better sugar, but it’s still a processed one. I now use coconut sugar most of the time when making recipes that require sugars.  Coconut sugar is a great sub for granulated sugars. )

 This is the easiest mousse I’ve ever made!

I’d serve a scoop of it with strawberries or blueberries. I forgot to take a picture, but I had it with frozen blueberries.

What makes this healthy IS the coconut milk, instead of regular milk, and Xylitol is a healthy choice in place of sugar. :)

Coconut Mousse

Ingredients

  • 1 can coconut milk
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 2 to 3 tsp Xylitol (or more if you desire it to be sweeter)

Instructions

  1. Put can of coconut milk in refrigerator for a few days until hardened. 2 days really worked out great for me.
  2. Scoop hardened coconut milk out into bowl (leaving the liquid in can). Stir in vanilla, cinnamon, Xylitol, and coco. Mix well. Taste and add more sweetener if needed. Serve chilled with strawberries, blueberries, or by itself.

      Hmm, I am unsure how much it would serve. If I remember correctly we had only used one can for a family get together of 6 adults and 2 kids. With strawberries and blueberries it was perfect for us. :)
