I was looking around for an easy egg salad sandwich recipe to fulfill my craving, found a nice one, but soon realized I didn’t have all the ingredients. SO I just improvised with this simple recipe. 
Ingredients:
- 2 Hard Boiled Eggs
- 1 TBS Mayo
- 1 to 2 TSP Mustard
- 1 TSP Dill
- Salt and Pepper to taste
- Bread of choice
Directions:
Chop hard boiled eggs, mix in mayo, mustard, dill and salt and pepper. Add to bread of choice, making a VERY simple delicious egg salad sandwich. (You can also add lettuce if you choose, or whatever else you like to add to these type of sandwiches.

I’m a big fan of egg (any kind) sandwiches. This recipe sounds great…like something I would do in a pinch too!

I do like just about all egg sandwiches too. So many yummy recipes out there, and with it being breakfast and talking about this now.. I am starting to get HUNGRY for an egg sausage sandwich. Alas we don’t have sausage! Bummer.
As silly as it sounds, I am huge fan of egg salad and make it all the time. I make sandwiches out of it. I put it on a bed is lettuce or I just eat it out of the bowl… LOL.
