Spanish Rice has never tasted THIS good before! I was amazed at the simpleness of this recipe and it’s something I’ve already made 4 times now. It goes WONDERFUL with the Enchiladas I made (which I will be posting about on Wednesday, so stay tuned!).
Ever since I started the meal plans with Holistic Squid, I have enjoyed many wonderful dishes. This one is one my husband requests often. The smile on his face and the fact he is SO happy every time I make this, is SO worth it. Doesn’t the saying go, “A way to a man’s heart is through his stomach?” Well in this case, it’s Mexican food with my husband!
First you make the rice. Holistic Squid has a wonderful way to make plain white rice nutritious. Cook it in chicken broth! I make my own chicken broth (which I’ll once again post a recipe for). It’s SO delicious! I am sure any chicken broth will work. Even still, if you don’t want to make it in chicken broth you do not have to.
Cook the onions with butter, then add the tomato paste, cumin, salt, oregano, chili pepper and garlic powder. Mix well. Add rice and viola! Perfection! Seriously, you’ll be addicted! I can’t stop taking little spoonfuls from time to time while I make this.. It’s THAT good!
I am giving Holistic Squids Recipe word for word, although I don’t make it with ALL the ingredients. This is so, if you would like to add what I didn’t, you will know the proportions. I did not add the cilantro, but I have added parsley from time to time(just for looks)
I don’t normally add the lime juice either.
Other then that, I follow this recipe to a T.
