Zucchini Bread

When I was on a visit with my Midwife, she had some fresh zucchini from her garden she offered me.  I used the couple  smaller ones she gave me for stir fry.  The very large one, she gave me, I was unsure what to do with..

Then it hit me! Zucchini bread.  I’ve never made it before. Figured I would give it a whirl. This bread didn’t last more then 2 hours once out of the oven! The boys loved it! Me too. ;)

The bread didn’t turn out pretty, but the taste was so delicious I wish I could have made two!  The recipe actually was for two. I made only one, as I didn’t have enough zucchini for two loafs.  You will notice the odd 1 1/2 egg part in the recipe below.  Other then that, it was easy to make half the recipe.   I will be making this again for sure.  Here is the source of the recipe.

Because I like to print out my own recipes, I’ve been on the look out for a way to do that on this blog. This plugin seems simple enough..  What do you think?

Zucchini Bread

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1-1/2 teaspoons ground cinnamon
  • 1-1/2 eggs
  • 1/2 cup vegetable oil
  • 1 cup and 2 tablespoons white sugar
  • 1-1/2 teaspoons vanilla extract
  • 1 cup grated zucchini

Instructions

  1. Grease and flour one 8 x 4 inch pan. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pan.
  4. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

This zucchini bread is to die for delicious! Love it more then the chocolate marble banana bread for sure!

    • Oh chocolate zucchini bread sounds heavenly!

      One thing I loved about this was the smell in the house. I just wanted to keep having that scent. hmmmmm, I need to get more zuchinni to make this again. :)

    • It was delicious for sure! :) The plugin is “Easy Recipe” You can purchase the full version, which I am considering, although the free one works good for now. :)

      • Susan, just wanted to let you know I switched to “Ziplist”. I like it much better. :) There is a plugin for it called ZipList Recipe Plugin. They also have a website called Ziplist.com

  3. hmm, I don’t remember if I had a piece of that or not. I am sure it was yummy and I do remember saying I should bake some too. I need to get a zucchini so I can make some if the boys like it so much. :O)

    • Daddy had most of it. I think you MAY have gotten a bite. I do think this weather would be perfect for this. As the smell in the kitchen is REALLY nice. :)

  5. I LOVE zucchini bread, but I had never made it before this summer when I had zucchini I needed to use from my garden. So I made some. The recipe I had was enough for two loaves, which as it turned out I have two totally different bread pans. One is non-stick aluminum and the other is glass. The one in the glass turned out fantastic. The one in the non-stick pan was AWFUL. Isn’t that weird. Same batch. Same cooking time. Same everything. Just a different pan. Anyway, I’ve been baffled by that ever since. Lol!

      Every time I think about this bread I can practically smell it! Ahh, I need to make more. :)
